Elvis Presley Cake

You are going to love this Elvis Presley Cake because it is a deliciously moist oatmeal spice cake frosted with sweet brown sugar icing. An easy-to-make sheet cake made in a 9×13 pan, everyone loves this cake! It is truly sensational just like Elvis Presley was!

I am sharing a delicious cake recipe today. It is called Elvis Presley cake. Why is it called Elvis Presley cake you ask? I honestly have no idea why. This recipe is passed down through the family and was probably created during the time Elvis Presley became a famous sensation. Really it is just an oatmeal spice cake with brown sugar icing but it is truly sensational, as was Elvis Presley apparently.

This cake is easy to make and has very simple ingredients which you probably already have in your house. Try this recipe out the next time you need a cake for a get-together or you just need your own cake fix.

What is Spice Cake made of?

This Elvis Presley Cake requires very simple ingredients-nothing complicated. You probably have all the ingredients in your pantry already.

  • Margarine or butter: For moisture and flavour.
  • Brown Sugar: Sweetens the cake, and brown sugar gives the best flavour in this recipe.
  • Quick Oats: Adds to the texture and structure of the cake.
  • Boiling Water: To fully mix in the ingredients together and to ensure the batter is not too thick.
  • Eggs: Provides structure and moisture.
  • Vanilla Extract: Adds flavour.
  • Flour: All-purpose flour is all that is needed for the base of the batter.
  • Cinnamon and All Spice: For that enjoyable full spice flavour.
  • Baking Soda: Leavening agent to help the cake rise while baking.

How to make Elvis Presley Cake from Scratch

Making the cake batter is very simple and quick. First, preheat your oven to 325° F. In a large bowl, pour 1 cup boiling water over 1/2 cup margarine or butter, then add 2 cups packed light brown sugar, and 1 cup of quick oats. Stir together until well combined. You can use a mixer like I did to make it easier.

Next mix in 2 eggs and 1 teaspoon vanilla extract.

In a medium bowl, combine 1 cup flour, 1 teaspoon cinnamon, 1/2 teaspoon allspice, and 1 teaspoon baking soda. Add this to your oat mixture and stir until just mixed.

Pour the batter into a greased and floured 9×13 inch cake pan and bake in the oven for 30 minutes or until a toothpick inserted comes out clean.

Frost with brown sugar icing while still warm, then let cool completely in the pan.

Ingredients

  • ½ cup margarine or butter
  • 2 cups brown sugar packed
  • 1 cup oats quick
  • 1 cup water boiling
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup flour all-purpose
  • 1 tsp cinnamon ground
  • ½ tsp allspice
  • 1 tsp baking soda

Instructions

  1. Preheat oven to 325 F.

  2. In a large bowl, pour the boiling water over the butter or margarine then add brown sugar, and oats and mix until combined. You may use a mixer to make it easier or by hand is fine.

  3. Stir in eggs and vanilla.

  4. In a medium bowl, combine flour, cinnamon, allspice, and baking soda. Add to oat mixture and stir until just mixed.

  5. Pour into a greased and floured 9×13 inch baking pan. Bake in preheated oven for 30 minutes or until toothpick inserted in the centre comes out clean.

  6. Frost with brown sugar icing while still warm. Let cool completely.

Store covered at room temperature up to 3 days, in the fridge up to a week, or in the freezer for up to 3 months.
