These Blueberry Lemon Sweet Rolls are the perfect combination of soft, fluffy dough, juicy blueberries, bright lemon, and sweet lemony cream cheese icing. They’re a fresh, summery twist on classic cinnamon rolls, bursting with juicy blueberries and bright lemon flavour.

The lemon adds just the right amount of freshness to the sweet blueberries, while the homemade rolls bake up soft and tender with golden edges. And that drizzle of lemon cream cheese icing? It makes them completely irresistible.

Ingredients

For the Sweet Roll Dough

  • Warm milk: I recommend using whole milk. It should be between 105-115 degrees F. It should be warm to the touch but not hot.
  • Quick-rise or active dry yeast: makes the rolls rise.
  • Granulated sugar: For flavour and to feed the yeast.
  • Lemon: adding lemon zest to the dough helps give it a lemony flavour. A good lemon zester helps with this step.
  • Salted butter: adds to the softness of the dough. If using unsalted, just add an extra pinch of salt.
  • Egg: use room temperature. I always set my ingredients out 2 hours before making. If in a pinch, you can set the egg in a bowl of warm water for 10 minutes.
  • Salt: flavour enhancer.
  • Bread flour: I used bread flour for the base of the dough as opposed to all-purpose. All-purpose could probably be substituted, but I haven’t personally tried it for this recipe yet, and I will keep you updated if I do.

For the Blueberry Filling

  • Granulated sugar: sweeten for a jam-like flavour.
  • Blueberries: I used fresh, but it can be made with frozen.
  • Cornstarch: to thicken.
  • Lemon juice: use fresh for the best flavour, but bottled could work if you’re in a pinch.

For the Lemon Cream Cheese Icing

  • Powdered sugar: sweetens.
  • Lemon juice: for a lemony flavour.
  • Cream cheese: the base of the recipe, which adds a tanginess.
  • Butter: makes it richer, improves texture and stability.

How to Make Blueberry Lemon Sweet Rolls

1. Make the blueberry filling:

In a medium saucepan over medium heat, combine the blueberries, sugar, cornstarch, water, and lemon juice. Stir everything together with a wooden spoon and bring the mixture to a gentle boil. As the blueberries cook, use the back of the spoon to mash them gently.

Continue cooking for 5–10 minutes, stirring frequently, until the mixture thickens to a jam-like consistency and coats the back of the spoon. The thicker the filling, the easier it will be to roll the dough without the filling spilling out. Set aside and allow the blueberry mixture to cool completely before using.

2. Prepare the dough:

In the bowl of a stand mixer, or a large mixing bowl if making the dough by hand, combine the sugar and lemon zest. Using clean fingertips, rub the zest into the sugar for about 30 seconds. This helps release the natural oils from the zest and infuses the sugar with fresh lemon flavour.

In a small microwave-safe bowl or glass measuring cup, warm the milk for 45 seconds to 1 minute, or until it reaches about 115°F. It should feel like very warm bath water—warm, but not hot. Pour the milk into the bowl with the lemon-infused sugar, then sprinkle the yeast over the top. Let it sit for 3–5 minutes, until the yeast becomes bubbly and foamy, indicating that it has been activated.

Add the egg and melted butter, then mix on medium speed for about 30 seconds, or until well combined. If making the dough by hand, stir everything together with a wooden spoon.

Remove the bowl from the mixer and gradually stir in the flour and salt with a wooden spoon until a dough begins to form. Mixing the flour in by hand first helps keep it from flying all over your kitchen!

3. Knead the dough:

Attach the dough hook to your stand mixer and return the bowl to the mixer. Knead the dough on medium speed for 8–10 minutes, until smooth and elastic. If making the dough by hand, transfer it to a lightly floured surface and knead for the same amount of time.

Keep in mind that this is a naturally sticky dough, so resist the urge to add too much extra flour. As long as you measure the ingredients correctly, the rolls will bake up soft, fluffy, and delicious!

4. Let the dough rise:

Lightly grease a large bowl with olive oil and place the dough inside. Cover the bowl with plastic wrap and a warm towel*, then let the dough rise for 1–1½ hours, or until it has doubled in size. Rising time can vary depending on the season, humidity, and temperature in your kitchen.

*Tidbit: How to Warm a Towel:

Dampen: Run a clean cotton tea towel under warm water.
Wring: Squeeze the towel tightly so it is damp, not dripping wet.
Heat: Place it in the microwave for 30–45 seconds. It should feel comfortably warm to your hand—never hot, as high heat will kill the yeast.

To check if the dough is ready, gently press your finger about 1 inch into the dough. If the indentation slowly remains instead of immediately springing back, the dough is ready for the next step.

Generously flour a clean work surface, then transfer the risen dough onto it. Using a rolling pin, gently roll the dough into a 10 x 14-inch rectangle, keeping the edges as even as possible.

5. Prepare the filling:

Spread the cooled blueberry filling evenly over the rolled-out dough using a spatula or the back of a spoon. Leave about a ¼-inch border along the far short edge to help keep the filling from spilling out when you roll the dough.

Starting from the short side (the 10-inch side) without the margin, very tightly roll up the dough. Seal the far edge of the dough as best you can by pinching the dough together just slightly, then make sure the dough log is seam-side down. Cut a ½-inch off the ends of the dough, as the ends won’t have enough filling; feel free to discard (or bake separately as yummy extras). Use your hands to give the dough log a gentle push inwards on both ends so that it compacts slightly, as it may have stretched out a bit during the rolling process.

Using unflavored dental floss or a serrated knife, carefully slice the dough into nine even pieces, about 1 inch wide each.

Line a 9×9-inch or 11×7-inch pan with parchment paper. Place the rolls in the prepared baking pan. Cover with plastic wrap and a towel, and let rise again until the rolls have puffed up, are doubled in size, and touch each other in the pan, about 45 minutes to 1 hour.

Meanwhile, preheat the oven to 350°F.

Once the rolls have finished rising, remove the plastic wrap and towel. Bake for 20–25 minutes, or until the edges are lightly golden. Be careful not to overbake, as this helps keep the centers soft, tender, and fluffy.

While the rolls bake, prepare the lemon cream cheese frosting: In the bowl of a stand mixer fitted with the whisk attachment, beat the cream cheese and butter until smooth. Then add the powdered sugar and 1 1/2 teaspoons of lemon juice. Beat on low speed to start, then increase to medium-high speed and mix until smooth and fluffy, 1 to 2 minutes. (Alternatively, whisk the frosting by hand.) Immediately spread the frosting over the rolls so the frosting gets into every little nook and cranny of the roll, and then serve. ENJOY!

Make-Ahead Instructions

Want fresh sweet rolls in the morning?

After placing the rolls into the greased pan, cover the baking dish tightly and refrigerate overnight.

In the morning, remove the rolls from the refrigerator and let them sit at room temperature for about 45–60 minutes while the oven preheats.

Bake as directed and drizzle with the lemon cream cheese icing.

Tips for Perfect Sweet Rolls

Don’t over-flour the dough.
The dough should be soft and slightly tacky rather than stiff.

Give the dough enough time to rise.
A warm, draft-free spot will help the yeast do its job.

Don’t skip the lemon zest.
The zest gives these rolls a much stronger lemon flavour than juice alone.

Let them cool slightly before glazing.
If the rolls are piping hot, the glaze will melt right off. A little warmth is perfect.

How to Store

Store leftover rolls in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.

Warm individual rolls in the microwave for a few seconds before serving.

How to Freeze Sweet Rolls

To freeze before baking: Freeze the rolls after the first rise, once they’ve been filled, rolled, and cut. Arrange them in a baking pan, cover tightly, and place in the freezer.

When you’re ready to bake, thaw the rolls in the refrigerator, preferably overnight. Then let them sit in a warm spot for 30 minutes to 1 hour, allowing them to complete their second rise. Bake as directed.

To Freeze After Baking: Allow the lemon sweet rolls to cool completely to room temperature. You can freeze the entire pan—just wrap it tightly or cover it well with an airtight lid—or freeze the rolls individually for easy grab-and-go treats.

When you’re ready to enjoy them, thaw the rolls at room temperature. Once thawed, warm them in a 350°F oven for 10–15 minutes, or microwave individual rolls for 20–30 seconds.

For the best texture, I prefer to freeze the rolls before adding the icing and frost them once they’re ready to serve. The icing can also be frozen separately.

Lemon Cream Cheese Frosting

  • 4 oz cream cheese softened
  • ¼ cup butter softened
  • 1 ½ tsp lemon juice
  • 2 cups icing sugar sifted

Recipe Notes

Storage: Cover leftover frosted rolls tightly and store them in the refrigerator for up to 5 days. Unfrosted rolls can be kept at room temperature for up to 2 days or refrigerated for up to 5 days. You can freeze the blueberry rolls for up to 3 months.

Overnight Lemon Blueberry Sweet Rolls: After the rolls have been placed in the greased baking pan following the first rise, cover the pan tightly and refrigerate overnight for 8-12 hours. This is the ideal refrigeration time, but if needed, the rolls can be refrigerated for up to 16 hours. Do not exceed 16 hours, as this can affect the rise and texture of the rolls. In the morning, remove the rolls from the refrigerator and let them sit at room temperature for 60–90 minutes before baking as directed. This allows the rolls to complete their second rise and helps them bake up soft, fluffy, and delicious.

Yeast Tips: If you’re using quick-rise or instant yeast, there’s no need to proof or activate it before adding the other dough ingredients. If using active dry yeast, dissolve it in the warm milk first and let it sit until small bubbles begin to appear before continuing with the recipe. Keep in mind that dough made with active dry yeast may take a little longer to rise. Either type of yeast will work well in this recipe.
