Peanut Butter Oatmeal Chocolate Chip Cookies

It’s like three cookies in one which makes it the default choice when you’re not sure what to make. Peanut butter, oatmeal, and chocolate chips all in one cookie? Yep, and they are delicious and easy to make as well 🙂

Thanks to the oats in this recipe these cookies bake up nice and chewy, yet are still soft. Full of peanut butter flavour and chocolatey morsels in each bite you’ll want these in your cookie jar asap!

This recipe makes 6 dozen so you have plenty to share, freeze for later, etc.

Peanut Butter Oatmeal Chocolate Chip Cookies

In a large bowl cream 1 and 1/2 cups of butter or margarine with 1 cup each of white sugar and brown sugar until combined. You can use either dark or light brown sugar in this recipe. I used light for this batch. Add 1 cup of smooth peanut butter and blend. Add 2 eggs and 1 and 1/2 teaspoons of vanilla extract beating well after each addition.  The vanilla extract is essential in almost every cookie recipe as it really advances the flavour.

Now add your dry ingredients- 2 and 1/2 cups of all-purpose flour, and 2 tablespoons corn starch and mix in well. Then add 3 cups of quick oats, stirring until your dough comes together. And last but not least add 1 and 1/2 cups of chocolate chips and mix to incorporate.

Roll into balls and place on parchment-lined cookie sheets about two inches apart. Press down on each cookie with a fork dipped in water. Dipping it in water will prevent the fork from sticking. Bake for 10-12 minutes in a 350°F oven. Cool on the baking sheet for about 5 minutes before removing to a wire rack to cool completely.

Peanut Butter Oatmeal Chocolate Chip Cookies

Ingredients

  • 1 ½ cups margarine or butter softened
  • 1 cup brown sugar packed
  • 1 cup white sugar
  • 1 cup peanut butter smooth
  • 2 eggs
  • 1 ½ tsp vanilla extract
  • 2 ½ cups flour all-purpose
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tbsp corn starch
  • 3 cups rolled oats
  • 1 ½ cups chocolate chips

Instructions

  1. Cream first 3 ingredients. Add peanut butter and blend. Add eggs and vanilla and blend. 

  2. Mix together in separate bowl the flour, baking soda, baking powder, and corn starch. Add to the butter and sugar mixture and mix. Add rolled oats and combine. Fold in chocolate chips.

  3. Roll into balls and press with a fork dipped in water. Bake 10-12 minutes at 350° F. Let cool for about 5 minutes on the pan before removing onto a wire rack to cool completely. 

Recipe Notes

Cookies keep fresh covered at room temperature for up to one week, or in the freezer for up to 6 months.

Also, you can keep unbaked cookie dough in the fridge covered for up to 5 days, or in the freezer for up to 3 months. You may need to add an extra minute if baking cookie dough from frozen or let thaw for a few minutes prior.
