Best Ever Soft Chocolate Chip Cookies

Best ever recipe for baking soft and chewy Chocolate Chip Cookies. Dunk freshly baked gooey cookies in milk for a tasty treat!

Chocolate chip cookies are my absolute favourite. And this recipe is the best I have ever encountered. I found this recipe a few years ago and just made a few minor changes to make it perfect. These cookies are soft and chewy in the centre. Delightful on their own or with a nice big glass of milk. You will have a hard time keeping your cookie jar full with these cookies.

Chocolate chip cookie dough is also my weakness. Although I know we aren’t suppose to eat raw cookie dough, I just can’t help myself.. its just so darn good!

Chocolate Chip Cookies from Scratch

You want to preheat your oven to 350 F to start.

In a large mixing bowl cream together 1 cup of softened butter or margarine, 1 cup packed brown sugar, and 1 cup white sugar.

Beat in the eggs one at a time to be sure they are mixed in well, then add  2 teaspoons of vanilla extract. Im a big fan of adding more vanilla and less salt to my baking. Dissolve 1 teaspoon baking soda in 2 teaspoons hot water, then add to batter along with 1/2 teaspoon salt.

Stir in  2 and 3/4 cups flour and 1 tablespoon corn starch. The corn starch helps keep the centre of the cookies nice and soft. Now for the best part- fold in 1 and 1/2 cups chocolate chips. My favourite is semi-sweet or dark but you could use milk chocolate chips as well.

Drop by large spoonfuls onto un-greased baking sheets- try not to eat too much dough while you do this…I know its a struggle for myself! Bake in preheated oven for 10 minutes or until the edges are golden. Let cool for about 5 minutes before removing from pan and transfer to a cooling rack to cool completely. This recipe makes about 4 dozen cookies.

Freeze for Later

Also, if you don’t want to eat all these cookies in one week you can roll some cookie dough into balls and freeze in a single layer on a cookie sheet. Once frozen transfer to a freezer bag. Next time you are craving for chocolate chip cookies, simply take them out, let thaw for about 20 minutes and bake as per instructions. Enjoy!

  3. Dissolve baking soda in water and add to batter along with salt. Stir in flour and corn starch, then fold in chocolate chips. 

  4. Drop by large spoonfuls onto un-greased baking sheets. Bake for 10 minutes in preheated oven or until golden brown around the edges.
