Ginger Sparkles

This Ginger Sparkles recipe is sure to impress. Called ginger sparkles because they are rolled in white sugar before baked which makes them sparkle. Some people may call these ginger snaps but these cookies have a nice, soft, and chewy centre.

Ginger Sparkles are sweet and spicy which is perfect for the winter season. So print this recipe below, bake some up today and warm up your home with the enticing aroma of ginger.

Instructions

First preheat your oven to 325 F.

Cream 3/4 cup softened margarine or butter with 1 cup packed light brown sugar in a large bowl until light and fluffy. Add in the egg and mix well. Then measure and pour in 3/4 cup of fancy molasses, and 1 tsp vanilla extract, stir until combined.

In a separate smaller bowl sift together 2 cups all-purpose flour, 2 teaspoons baking soda, 1 tablespoon corn starch, 1/2 teaspoon salt, 1 teaspoon cinnamon and 1 teaspoon ginger. Add this to the wet ingredients and mix until well incorporated. Having a good set of mixing bowls is key in every bakers kitchen. Next roll into balls, then  to add the sparkle roll into white sugar. Place on baking sheet and bake in preheated oven for 8-10 minutes or until edges are golden brown.

Let cool for about 5 minutes before removing onto wire racks to cool completely.

The sparkles from the sugar and the crinkles on top make these cookies look so tasty. And the aroma of the spices really makes the house feel like a home. Everyone will feel so excited and welcome after coming in from a long day of work or school to these delicious cookies.

Ingredients

  • ¾ cup margarine or butter
  • 1 cup brown sugar light
  • ¼ cup molasses fancy
  • 1 tsp vanilla extract
  • 2 cups flour all-purpose
  • 2 tsp baking soda
  • 1 tbsp cornstarch
  • ½ tsp salt
  • 1 tsp cinnamon ground
  • 1 tsp ginger ground

Instructions

  1. Mix in large bowl 3/4 cup margarine or butter with 1 cup packed brown sugar. Then add in the egg, molasses and vanilla extract, mixing well after each addition.

  2. In a separate bowl mix together flour, baking soda, cornstarch, salt, cinnamon, and ginger. Add to wet ingredients and mix until well incorporated. 

  3. Form into balls and roll into white sugar to evenly coat. Place on baking sheet and bake in 325° F oven for 8-10 minutes or until edges are golden brown.

  4. Cool for about 5 minutes before removing onto wire racks to cool completely.  Enjoy! 

Recipe Notes

Unbaked cookie balls and baked cookies can be stored in freezer for up to 3 months. 

Add 1-2 minutes of bake time if baking from frozen.
