Peanut Butter Squares

You are going to love these Peanut Butter Squares because they are an easy-to-make, no-bake treat. Made with Rice Krispies and Corn Flakes for a sweet and crunchy cereal bar. Topped with rich brown sugar icing for an irresistible snack or dessert.

National Peanut Butter Day is coming up on January 24th, so stock up on your peanut butter and make these delicious squares to celebrate!

What are Peanut Butter Squares made of?

The cereal base is made of the following ingredients:

  • Brown Sugar
  • Corn Syrup
  • Smooth Peanut Butter
  • Rice Krispies
  • Cornflakes
  • Vanilla Extract

The icing on top consists of:

  • Brown Sugar
  • Butter or margarine
  • Cream or milk
  • Icing sugar

Peanut Butter Squares

Let’s start with the cereal base.

Heat 1/2 cup each corn syrup and brown sugar in a medium saucepan, stirring until sugar is dissolved. Remove from heat. Stir in peanut butter and vanilla extract until smooth.

Add 2 cups each of crushed cornflakes and rice cereal. Stir to coat well. Press into greased 9 x 9-inch or 8 x 8-inch pan.

Brown Sugar Icing

Now for the rich and irresistible brown sugar icing. I have another version of brown sugar icing for my spiced Elvis Presley Cake. It is one of my favourite icings, next to cream cheese frosting.

Measure 1 cup brown sugar, 2 tablespoons butter or margarine, and 4-6 teaspoons cream into a small saucepan. Bring to a boil and allow to boil for 1 minute. Cool. I found 6 teaspoons which equals 2 tablespoons was the perfect amount for mine.

Slowly add about 1 cup of icing sugar to thicken. Beat with a spoon, adding more icing sugar or cream if necessary to get a proper spreading consistency. Spread over the top of the cereal base. Cuts into 16-36 squares.

And that’s it! No baking is required! You will fall in love with these sweet, crunchy, chewy Peanut Butter Squares that are loaded with peanut butter and brown sugar flavour.

Each square is about 265 calories if cut into 16 squares.

Ingredients

    1. Thanks! I’ve only ever tried it with corn syrup before, so I cant say for sure. Possibly honey or maple syrup could work. Let me know if you try it!
