Easy Apple Cinnamon Streusel Muffins

You are going to love these Apple Cinnamon Streusel Muffins because they are super moist, sweet, and have delicious flavour from the apples and cinnamon. These muffins are easy to make and are a great snack. Each bite is filled with sweet apple chunks and cinnamon flavour. And the cinnamon sugar streusel puts them over the top delicious.

I have a wide array of muffin recipes on the blog and it was time I made another muffin recipe to add to the repetoire. These muffins are honestly so delicious! The cinnamon sugar streusel uses the same recipe as my Blueberry Streusel Muffins and Cinnamon Raisin Streusel Muffins because it just can’t be beat. Of course you can leave the streusel out but the streusel sprinkled on top of each muffin just makes them extra tasty and special.

This is a great recipe if you have lots of apples to use up. This recipe uses 2 peeled and chopped apples but you can make a double batch and freeze one for later!

What Apples are Best for Muffins?

I used Gala apples to make these muffins. Gala apples have a firm bite but a delicate sweet taste which complements the recipe perfectly. But Granny Smith apples are also very good in baking with as they bring a tart taste to balance out the sweetness. Honeycrisp and Fuji apples are also great for baking as they are nice and crisp which holds up quite nice in baking.

How to Make Easy Apple Cinnamon Streusel Muffins

  1. First, preheat your oven to 425 F and spray a muffin pan with non-stick spray, or line with muffin liners. This recipe makes 14 muffins therefore you will need to line or spray two extra muffin cups.
  2. For the streusel mix together 1/4 cup of brown sugar, 1/2 teaspoon of ground cinnamon and 2 tablespoons of all-purpose flour in a small bowl. Then add 1 tbsp of butter and mix until crumbly. Set aside.
  3. Whisk together 1 and 1/2 cups of all-purpose flour, 2 teaspoons of baking powder, 2 teaspoon ground cinnamon, 3/4 cup granulated sugar and 1/2 tsp salt. Set aside.
  4. Mix 2 large eggs, 1/3 cup of oil, 2 teaspoons of vanilla extract, 1/3 cup of applesauce and 1/3 cups of milk. I like to use my 4-cup measuring cup for this, for easy mixing and pouring. Then add to your dry ingredients and mix until just combined. Fold in chopped apples.
  5. Divide batter in prepared muffin pan about 3/4 full. Sprinkle about 1 teaspoon of streusel on top of each muffin.
  6. Bake in the oven for 5 minutes, then reduce temperature to 350 F and bake for an additional 16 minutes or until a toothpick inserted in the centre comes out clean. Let cool for 10 minutes in the pan before removing onto a wire rack to cool completely. Enjoy!

Ingredients

Streusel

  • ¼ cup light brown sugar packed

  • cups flour all-purpose

  • cup oil olive, canola, vegetable, or coconut
  • 2 tsp vanilla extract
  • cup applesauce unsweetened
  • cup milk
  • 2 apples peeled, cored, and chopped

Recipe Notes

Muffins stay fresh at room temperature up to 3 days, in the refrigerator up to one week, and in the freezer up to 3 months.
