Bacon Broccoli and Cheese Egg Bake

This Bacon Broccoli and Cheese Egg bake is basically a savoury egg casserole. Like the name says bacon, broccoli, and cheese make up this delicious breakfast bake. It is so tasty you can even make it for dinner. Serve with hash browns for a complete meal.

This is a simple to make dish that can be varied and expanded upon and if you have a lot of eggs to use up then this Bacon Broccoli and Cheese Egg bake would be the perfect dish to make as the recipe calls for 8 eggs. You can switch out the bacon for turkey bacon to make it even healthier. Or substitute it with sausage or diced ham. Use cheddar cheese in place of parmesan, add or substitute veggies such as bell peppers. The choices are endless.

You can prep all the ingredients the night before and then assemble and cook in the morning for an easy breakfast. You can even bake it beforehand and reheat it in the morning.

Bacon Broccoli and Cheese Egg Bake

Prep ahead by cooking 6 slices of bacon. My preferred method is to cook in the oven. To do this preheat your oven to 400 F. Place bacon strips onto a baking sheet lined with aluminum foil. Bake for 12 minutes flipping halfway through. You may need to cook a few minutes longer if you like them crispy, but be careful not to overcook. Set aside to drain on paper towel.

Saute 1/2 diced yellow onion in 3 tablespoons of olive oil. Cook for about 5 minutes until onions are soft. Set aside.

Whisk 8 eggs with 1/2 cup of milk and 3/4 teaspoon of salt. Add your cooked and crumbled bacon along with 1 cup of chopped broccoli, and 1/4 cup of grated parmesan cheese and mix.

Spread the onions and leftover oil in a 9×13 inch casserole dish. The oil will help prevent the egg from sticking as it bakes. Pour the egg mixture over top. Bake in a 350 F oven for about 30 minutes or until the egg is fully cooked.

What temperature should an egg casserole be cooked to?

Bake until a thermometer inserted in the centre shows 160° F or a knife inserted near the centre comes out clean. However, you may find it difficult to tell if a knife shows uncooked egg or melted cheese, therefore, a thermometer can be more accurate.

Ingredients

  • ½ yellow onion chopped
  • 3 tbsp olive oil
  • 8 eggs large
  • ½ cup milk
  • ¾ tsp salt
  • 6 bacon slices cooked and crumbled
  • 1 cup broccoli chopped
  • ¼ cup parmesan cheese grated

Instructions

  1. Preheat oven to 350°F.

  2. Saute the onion in a medium skillet with the olive oil for about 5 minutes until the onions are softened.

  3. Whisk the eggs, broccoli, and cheese together in a large bowl.

  4. Spread the onions and leftover oil in a 9×13 inch casserole dish. Pour the egg mixture over top. Bake for 30 minutes or until a thermometer inserted in the centre reaches 160°F or a knife inserted in the center comes out clean.

Recipe Notes

Recipe can be varied by subsitituting cooked sausage or diced ham for bacon. Add or replace broccoli for bell peppers. Cheddar or mozzarella for parmesan.
