An easy breakfast or dinner recipe that can be prepped ahead of time. Serve with hashbrowns for a delicious and savoury meal.
Preheat oven to 350°F.
Saute the onion in a medium skillet with the olive oil for about 5 minutes until the onions are softened.
Whisk the eggs, broccoli, and cheese together in a large bowl.
Spread the onions and leftover oil in a 9x13 inch casserole dish. Pour the egg mixture over top. Bake for 30 minutes or until a thermometer inserted in the centre reaches 160°F or a knife inserted in the center comes out clean.
Recipe can be varied by subsitituting cooked sausage or diced ham for bacon. Add or replace broccoli for bell peppers. Cheddar or mozzarella for parmesan.
