We are amid Fall and I have to say I have been making all the pumpkin things lately! From Pumpkin Spice drinks to Pumpkin Breads, Muffins, and scones. I am in full pumpkin mode. And, if you’re a pumpkin fan like me, you are going to love these Easy Pumpkin Spice Waffles.

I’m a big breakfast person and I am even one of those people who make breakfast for dinner. We make pancakes more often, however we like to make waffles as a special treat. There is something about waffles that just feels extra special. My Fluffy Waffles recipe is the usual go-to recipe for the best-tasting waffles. However, in the Fall, you have to make these Pumpkin Spice Waffles at least once. They just get you in the Fall mood, so roll up the sleeves on your cosy sweaters, light a Fall-scented candle, and start making these oh-so-delicious waffles.

Waffles are also great for freezing. You can make a big batch, freeze them, and then defrost them in the microwave for a tasty, quick, and easy breakfast.

Ingredients You’ll Need

  • All-purpose flour: the base.
  • Dark brown sugar: the extra molasses in dark pairs so well with pumpkin.
  • Baking powder: the lift.
  • Baking soda: the other lift.
  • Pumpkin pie spice: gives a warm spice and flavour. See the tips below for how to substitute pumpkin pie spice.
  • Salt: flavour enhancer.
  • Pure pumpkin: be sure to use pure, not pumpkin pie mix.
  • Buttermilk: you can buy buttermilk or make your own. See the tips below.
  • Eggs: bind everything together.
  • Butter: the fat which also adds delicious flavour.

Easy Pumpkin Spice Waffles

In a large bowl mix the following ingredients: 1 and 3/4 cups of all-purpose flour, 1 tablespoon of dark brown sugar, 1 and 1/2 teaspoons of baking powder, 1 teaspoon of baking soda, 2 teaspoons of pumpkin pie spice, and 1/2 teaspoon of salt.

Mix 1 cup of pure pumpkin, 1 cup of buttermilk, 2 large eggs, and 3 tablespoons of melted butter in another bowl or large measuring cup.

Pour the wet ingredients into the dry and mix until just combined.

Heat a waffle iron until hot. Lightly oil the griddle and pour the waffle batter (about 1/2 cup each) into the waffle iron. Close gently and cook until golden brown and crisp, about 4-5 minutes depending on your waffle maker. Repeat with the remaining batter. Serve and enjoy!

Recipe Tips & Tricks

  • Avoid overfilling the waffle maker.
  • Try adding chocolate chips to the batter before baking for an even more indulgent treat
  • You can keep them warm by placing them in a 170-degree oven. 

How to Substitute Pumpkin Pie Spice:

To replace 2 teaspoons of pumpkin pie spice use 1 tsp ground cinnamon, 1/2 tsp ground ginger, 1/4 tsp of ground nutmeg, 1/8 tsp of cloves, and 1/8 tsp allspice.

How to Make Buttermilk:

Place 1 tablespoon of either white vinegar or lemon juice into a 1 cup measure cup. Pour milk up to the 1 cup line and stir. Let sit for 5 minutes.

What to serve Pumpkin Spices Waffles with:

  • bacon, sausage, or scrambled eggs for protein
  • fresh, or frozen thawed berries
  • drizzle of peanut butter
  • dusting of powdered sugar
  • fresh whipped cream
  • extra dusting of cinnamon or pumpkin pie spice

Ingredients

  • cups flour all-purpose

Recipe Notes

Store in the refrigerator for up to one week or in the freezer for up to 3 months.
