Easy Pumpkin Spice Waffles

These Pumpkin Spice Waffles are easy to make, full of pumpkin flavour, and makes for a great seasonal breakfast!

Ingredients

  • cups flour all-purpose
  • 1 tbsp dark brown sugar packed
  • tsp baking powder
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice *
  • ½ tsp salt
  • 1 cup pure pumpkin
  • 1 cup buttermilk *
  • 2 eggs large
  • 3 tbsp butter melted

Instructions

  1. In a large bowl mix the following ingredients: 1 and 3/4 cups of all-purpose flour, 1 tablespoon of dark brown sugar, 1 and 1/2 teaspoons of baking powder, 1 teaspoon of baking soda, 2 teaspoons of pumpkin pie spice, and 1/2 teaspoon of salt.

  2. In another bowl or large measuring cup mix together 1 cup of pure pumpkin, 1 cup of buttermilk, 2 large eggs, and 3 tablespoons of melted butter.

  3. Pour the wet ingredients into the dry and mix until just combined.

  4. Heat up a waffle iron until hot. Lightly oil the griddle and pour the waffle batter (about 1/2 cup each) into the waffle iron. Close gently and cook until golden brown and crisp, about 4-5 minutes. You can keep them warm by placing them in a 170 degree oven. Serve and enjoy!

Recipe Notes

Store in the refrigerator for up to one week or in the freezer for up to 3 months.

*To replace 2 teaspoons of pumpkin pie spice use 1 tsp ground cinnamon, 1/2 tsp ground ginger, 1/4 tsp of ground nutmeg, 1/8 tsp of cloves, and 1/8 tsp allspice.

*To make buttermilk: Place 1 tablespoon of either white vinegar or lemon juice into a 1 cup measure cup. Pour milk up to the 1 cup line and stir. Let sit for 5 minutes.
