Peanut Butter Baked Oatmeal

I don’t know about you, but I love baked oatmeal. It is the perfect breakfast to meal prep once and eat all week. This baked oatmeal has creamy peanut butter to give it delicious flavour, banana also for flavour and sweetness, and of course large flake oats which are full of nutritious health benefits.
This recipe fits an 8×8 or 9×9 inch casserole dish and serves 6. Serve with an extra drizzle of melted peanut butter on top and some sliced bananas for the ultimate breakfast.
Make It
Preheat oven to 350° F. Grease an 8×8 inch or 9×9 inch casserole dish. Set aside.
In a small to medium bowl combine 2 cups large flake oats, 1 teaspoon baking powder, 1/2 teaspoon of cinnamon, and 1/2 teaspoon of salt.
In a large bowl combine 2 medium ripe mashed bananas, and 1/4 cup of creamy peanut butter until smooth. Mix in 1 teaspoon vanilla extract, 1/4 cup of pure maple syrup, 1 cup of milk, and 1 egg.
Mix the wet and dry ingredients together and pour into prepared pan.Bake for 25-30 minutes or until top slightly springs back and the edges are just barely golden brown.
Cut into squares and drizzle extra melted peanut butter on top, and sliced bananas if desired.
If you are not eating all of the baked oatmeal at once, you can refrigerate the covered baked oatmeal up to one week or place in the freezer for up to 3 months. Simply cut the oatmeal into individual servings and wrap well with plastic wrap. You can then take out exactly how much you need and let thaw overnight in fridge. Can be easily reheated in the microwave, but it is also good cold.
