Peanut Butter Baked Oatmeal

Ingredients

  • 2 cups large flake oats
  • 1 tsp baking powder
  • ½ tsp cinnamon ground
  • ½ tsp salt
  • 2 banana ripe
  • ¼ cup peanut butter creamy
  • ¼ cup maple syrup pure
  • 1 egg large
  • 1 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350° F. Grease an 8x8 inch or 9x9 inch casserole dish. Set aside.

  2. In a small to medium bowl combine 2 cups large flake oats, 1 teaspoon baking powder, 1/2 teaspoon of cinnamon, and 1/2 teaspoon of salt.

  3. In a large bowl combine 2 medium ripe mashed bananas, and 1/4 cup of creamy peanut butter until smooth. Mix in 1 teaspoon vanilla extract, 1/4 cup of pure maple syrup, 1 cup of milk, and 1 egg.

  4. Mix the wet and dry ingredients together and pour into prepared pan.

  5. Bake for 25-30 minutes or until top slightly springs back and the edges are just barely golden brown.Cut into squares and drizzle extra melted peanut butter on top, and sliced bananas if desired.
