The combination of creamy peanut butter and oats makes for a delicious breakfast. Prep ahead for a quick and nutritious breakfast in the morning.
Preheat oven to 350° F. Grease an 8x8 inch or 9x9 inch casserole dish. Set aside.
In a small to medium bowl combine 2 cups large flake oats, 1 teaspoon baking powder, 1/2 teaspoon of cinnamon, and 1/2 teaspoon of salt.
In a large bowl combine 2 medium ripe mashed bananas, and 1/4 cup of creamy peanut butter until smooth. Mix in 1 teaspoon vanilla extract, 1/4 cup of pure maple syrup, 1 cup of milk, and 1 egg.
Mix the wet and dry ingredients together and pour into prepared pan.
Bake for 25-30 minutes or until top slightly springs back and the edges are just barely golden brown.Cut into squares and drizzle extra melted peanut butter on top, and sliced bananas if desired.
