Peanut Soup with Meatballs

This week, I am sharing an African dish- peanut soup with meatballs. Loaded with a combination of flavours- peanut, tomato, and tons of spices. This amazing combination of ingredients makes an astonishingly odd and splendid soup.

Last month, our church potluck theme was African. I was thinking I have no clue about African cuisine, so I asked my friend, who is from Zimbabwe. She then took me to her friends who is also from Africa, and she taught us how to make this peanut soup with meatballs. At first, I thought peanut butter in soup? However, after I took a spoonful of it, I thought it tasted splendid.

As she showed us how to make the soup, she didn’t have an actual written recipe, so I took notes as she went along. She just put a little of this and a little of that. When I got home, I measured everything out so I could write a recipe for it and share it with you guys because it is definitely share-worthy! I think I did a pretty good job of replicating the recipe, too, as it tasted about the same and just as delicious.

Ingredients You’ll Need

  • Cooking oil: Used to sauté the aromatics and brown the meatballs; olive or avocado oil both work.
  • Meatballs: add protein and heartiness to the soup. You can use beef, pork, turkey or chicken. Homemade or store-bought.
  • Onion: adds flavour.
  • Tomatoes: adds flavour and nutritious veggies.
  • Salt & Black pepper: Brings all the flavours together and lets you adjust the seasoning to your preference.
  • Garlic cloves: Boosts savoury flavour and pairs well with peanut and tomato.
  • BBQ chicken seasoning: enhances the savoury base and adds great flavour. If you don’t have BBQ chicken seasoning, you can simply omit it and add extra seasoning salt or play around with your own spices. Cumin, paprika, and cayenne would be great options to try as well.
  • Seasoning salt: adds extra flavour.
  • Chicken bouillon cube: flavour the soup. Can omit and sub water with chicken, beef or veggie broth instead.
  • Tomato paste: Adds acidity and richness, balancing the nutty sweetness from the peanut butter.
  • Peanut butter: The star ingredient! It creates a creamy texture and distinct nutty flavour that’s central to African peanut soups. Be sure to use natural peanut butter.
  • Water: Forms the base of the soup and thins out the peanut mixture.
  • Habanero peppers: adds a bit of a kick to the soup. Leave whole if you prefer mild spice, chop them up if you prefer spicy.

African Peanut Soup Instructions

Start by heating up two tablespoons of cooking oil in a large pot  or Dutch oven over medium heat. Once heated, add about 30 meatballs (cook in batches if you can’t fit all at once). Fry until browned and fully cooked. Transfer meatballs to a bowl for later.

You can use pre-made store-bought meatballs or just make your own. Here is my meatball recipe. Beef, chicken, turkey, pork, any will work. I used Italian-style store-bought meatballs. Superstore sells a big bag of them for only $10. I usually make my own, but store-bought is very convenient for when you are pressed for time or are just tired and don’t feel like making your own.

Add 1 sliced onion and 2 cups of sliced tomatoes. Let simmer while you add the seasoning. To give the soup big flavour, add salt and pepper, garlic, barbecue chicken seasoning, seasoning salt, one chicken bouillon cube and two tablespoons of tomato paste. Give it a good stir to incorporate.

Take about 3/4 cups of natural peanut butter and mix with 1 cup of water before adding to the pot. Add about 5 more cups of water and let it come to a boil.  At this point, you can also add habanero peppers depending on whether you like spicy food or not. I added 2 whole habanero peppers for mild to medium. You can cut up your peppers if you like it hot. Simmer for about 15 minutes. Add the cooked meatballs back in the pot, and you have your finished product.

It makes about 9 cups, so it is perfect for a larger crowd; however, you can definitely alter the amount of ingredients to fit your needs. Serve with buttered bread for an out-of-this-world experience.

🌶️ Tips & Variations

  • Vegetarian? Skip the meatballs and add chickpeas or lentils.
  • More veggies? Add diced carrots, red bell peppers, sweet potatoes or zucchini.
  • Creamier? Stir in a splash of coconut milk at the end.
  • No peanut butter? Almond butter works too — the flavour will be slightly different, but still delicious.

Ingredients

  • 2 tbsp cooking oil
  • 30 meatballs, beef, chicken, turkey or pork homemade or store-bought
  • 1 cup onion diced
  • 2 cups tomatoes diced
  • black pepper to taste
  • 4 garlic cloves minced
  • ¼ tsp bbq chicken seasoning
  • ¼ tsp seasoning salt
  • 1 chicken bouillon cube
  • 2 tbsp tomato paste
  • ¾ cup peanut butter natural
  • 6 cups water
  • salt to taste
  • 2 habanero peppers

Instructions

  1. Heat oil in a large pot over medium heat. 

  2. Add the meatballs and fry until browned and fully cooked. Move to a separate bowl for later use.

  3. Add onions and tomatoes to the leftover oil in the pot and cook until tender. 

  4. Add garlic,  chicken bouillon cube, and seasonings. Give it a good stir to incorporate. 

  5. Mix the peanut butter with 1 cup of water and add to the pot. Stir in  5 more cups of water. Add habanero peppers if you are using them. Use whole or sliced. Let come to a boil and simmer for about 15 minutes. Add the meatblls back in and serve warm.
