Ingredients You’ll Need

  • Caramels-using premade caramel candy rather than making caramel from scratch makes it easier. I highly recommend using the brand Kraft for the best quality caramel, but you could also try the Werthers. These are the square old-fashioned type of caramels that are soft and chewy rather than hard.
  • Quick Oats– provides a light texture and chewiness
  • Baking soda– provides a slight rise to the crumb mixture
  • Semi-sweet Chocolate Chips– creates a balance to the sweet caramel
  • Evaporated Milk– used to melt the caramels to create a sweet creamy caramel sauce for the bars
  • All-purpose Flour– helps the oat mixture hold together
  • Brown Sugar– adds sweetness to the oatmeal crumb mixture and a bit more of that caramel flavour
  • Butter or Margarine– adds moisture, brings the oatmeal crumb mixture together and combined with the brown sugar adds even more caramel flavour.
  • Salt– enhances the flavours and balances out the sweetness

Step by Step Instructions

  • Preheat oven to 350°F.
  • Melt 64 Kraft caramels (14oz package) in double boiler or microwave with 1 cup of evaporated milk. Microwave on high for about 30 second intervals until melted and fully mixed.
  • Mix 2 cups of all-purpose flour, 2 cups of quick oats, 1 and 1/2 cups of brown sugar, 1 teaspoon of baking soda, and 1 cup of softened butter or margarine together in a large bowl.
  • Press 3/4 of the mixture onto an 18″x15″ jelly roll pan or 10″x15″ cookie sheet smoothing with a spatula.
  • Bake in preheated oven for 5 minutes.
  • Sprinkle with 1 (12oz) package of semi-sweet chocolate chips over the crust.
  • Pour caramel mixture over this and sprinkle with remaining oat mixture.
  • Bake for 15-20 minutes or until edges are golden brown.
  • Cut into squares while warm and enjoy!
