Easy Carmelitas Recipe

Ooey gooey caramel and chocolatey goodness come together in these delicious oatmeal bars!

Ingredients

  • 64 (14 oz) Caramel squares I use Kraft
  • 1 cup milk evaporated
  • 2 cups flour all-purpose
  • 2 cups oats quick
  • 1 ½ cups light brown sugar packed
  • 1 tsp baking soda
  • 1 cup butter or margarine softened
  • 12 oz chocolate chips semi-sweet

Instructions

  1. Preheat oven to 350°F.

  2. Melt caramels in double boiler or microwave with 1 cup of evaporated milk. Microwave on high for about 30 second intervals until melted and fully mixed.

  3. Mix 2 cups of all-purpose flour, 2 cups of quick oats, 1 and 1/2 cups of brown sugar, 1 teaspoon of baking soda, and 1 cup of softened butter or margarine together in a large bowl.

  4. Press 3/4 of the mixture onto a greased 18"x15" jelly roll pan or 10"x15" cookie sheet smoothing with a spatula. Bake in preheated oven for 5 minutes.

  5. Sprinkle the chocolate chips over the crust. Pour caramel mixture over this and sprinkle with remaining oat mixture.

  6. Bake for 15-20 minutes or until edges are golden brown. Cut into squares while warm and enjoy!

Recipe Notes

Bars will keep at room temperature up to 1 week in an air-tight container or bag , or in the freezer up to 3 months.
