Ooey gooey caramel and chocolatey goodness come together in these delicious oatmeal bars!
Preheat oven to 350°F.
Melt caramels in double boiler or microwave with 1 cup of evaporated milk. Microwave on high for about 30 second intervals until melted and fully mixed.
Mix 2 cups of all-purpose flour, 2 cups of quick oats, 1 and 1/2 cups of brown sugar, 1 teaspoon of baking soda, and 1 cup of softened butter or margarine together in a large bowl.
Press 3/4 of the mixture onto a greased 18"x15" jelly roll pan or 10"x15" cookie sheet smoothing with a spatula. Bake in preheated oven for 5 minutes.
Sprinkle the chocolate chips over the crust. Pour caramel mixture over this and sprinkle with remaining oat mixture.
Bake for 15-20 minutes or until edges are golden brown. Cut into squares while warm and enjoy!
Bars will keep at room temperature up to 1 week in an air-tight container or bag , or in the freezer up to 3 months.
