Chewy Butterscotch Cookies

This week I am sharing my Chewy Butterscotch Cookies recipe. Buttery soft cookies made with brown sugar and the addition of butterscotch chips and toffee bits in each bite. Warning: eating just one bite of these soft and chewy cookies will tempt you to eat the whole batch they are so good!

What is the Secret to making Soft Chewy Cookies?

There are a number of factors that come into play when striving for the perfectly soft chewy cookie:

  1. Slightly under bake. You never want to over bake your cookies because that leads to a crunchier drier cookie. Slightly under baking makes them nice and soft.
  2. Use brown sugar instead of white. Brown sugar has extra moisture in it that adds to the cookies and also gives the cookie more butterscotch flavour.
  3. Corn starch. This is another secret ingredient that I add in many cookie recipes. Corn starch just seems to add some extra chewiness and thickness to the cookies which I love.

Method

Start by preheating the oven to 350° F.

Cream together 1 cup of butter or margarine and 2 cups of packed brown sugar. By using only brown sugar you are adding that awesome butterscotch flavoured added chewiness. Then add 2 eggs beating in one at a time. Stir in 1/2 teaspoon of vanilla.

Sift in 3 and 1/4 cups of all-purpose flour, 1 tablespoon of cornstarch and 1/2 teaspoon each of baking powder and baking soda. Mix to a soft dough yet firm enough to hold its shape when baked. Mix in 1 cup of butterscotch chips and 1/3 cup of toffee bits.

Drop by spoonfuls onto cookie sheets and bake in the oven for 10-12 minutes. Let cool for about 5 minutes before transferring to cooling rack to cool completely. Store in sealed container or bag. Makes 4-5 dozen cookies depending on how big you make them.

Ingredients

  • 1 cup butter or margarine softened
  • 2 cups brown sugar packed
  • 2 eggs large
  • 3 ¼ cups flour all-purpose
  • 1 tbsp corn starch
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp vanilla extract
  • 1 cup butterscotch chips
  • cup toffee bits

Instructions

  1. Preheat the oven to 350°F.

  2. Cream together butter and sugar. Beat in eggs one at a time. Mix in vanilla extract. 

  3. To a separate large bowl sift together flour, corn starch, baking powder, and baking soda.

  4. Slowly add the flour mixture to the wet ingredients and mix to a soft dough yet firm enough to hold its shape when baked. Mix in the butterscotch chips and toffee bits.

  5. Drop by spoonfuls onto cookie sheets and bake in 350° F oven for 10-12 minutes. Makes 4-5 dozen cookies.
