Butterscotch Cookies

A sweet cookie made with brown sugar and the addition of butterscotch chips and toffee bits in each bite. A great snack for kids and adults alike.

Ingredients

  • 1 cup butter or margarine softened
  • 2 cups brown sugar packed
  • 2 eggs large
  • 3 ¼ cups flour all-purpose
  • 1 tbsp corn starch
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp vanilla extract
  • 1 cup butterscotch chips
  • cup toffee bits

Instructions

  1. Preheat the oven to 350°F.

  2. Cream together butter and sugar. Beat in eggs one at a time. Mix in vanilla extract. 

  3. To a separate large bowl sift together flour, corn starch, baking powder, and baking soda.

  4. Slowly add the flour mixture to the wet ingredients and mix to a soft dough yet firm enough to hold its shape when baked. Mix in the butterscotch chips and toffee bits.

  5. Drop by spoonfuls onto cookie sheets and bake in 350° F oven for 10-12 minutes. Makes 4-5 dozen cookies.
