🥦 Ingredients

  • Onion: adds a ton of flavour.
  • Olive oil: used to saute the onions and helps the eggs not stick to the bottom of the pan.
  • Eggs: the main ingredient, of course. Eggs are nutritious and full of protein.
  • Milk: softens the texture of the eggs, making the final bake less rubbery and more tender.
  • Salt: adds flavour.
  • Bacon: kid and adult approved.
  • Broccoli: a great way to add greens to your breakfast.
  • Parmesan: cheesy flavour, can be substituted for cheddar.

Bacon, Broccoli and Cheese Egg Bake Instructions

Prep ahead by cooking 6 slices of bacon. My preferred method is to cook in the oven. To do this, preheat your oven to 400°F. Place bacon strips onto a baking sheet lined with aluminum foil. Bake for 12 minutes, flipping halfway through. You may need to cook a few minutes longer if you like them crispy, but be careful not to overcook. Set aside to drain on a paper towel.

Saute 1/2 diced yellow onion in 3 tablespoons of olive oil. Cook for about 5 minutes until onions are soft. Set aside.

Whisk 8 eggs with 1/2 cup of milk and 3/4 teaspoon of salt. Add your cooked and crumbled bacon along with 1 cup of chopped broccoli, and 1/4 cup of grated parmesan cheese and mix.

Spread the onions and leftover oil in a 9×13-inch casserole dish. The oil will help prevent the egg from sticking as it bakes. Pour the egg mixture over the top. Bake in a 350°F oven for about 30 minutes or until the egg is fully cooked.

What temperature should an egg casserole be cooked to?

Bake until a thermometer inserted in the centre shows 160° F or a knife inserted near the centre comes out clean. However, you may find it difficult to tell if a knife shows uncooked egg or melted cheese; therefore, a thermometer can be more accurate.

🥓 Tips & Variations

  • No bacon? Try sausage, ham, or go meatless and add mushrooms or bell peppers.
  • Dairy-free? Use almond milk and a dairy-free cheese alternative.
  • Freeze-friendly: Cut into squares and freeze for easy grab-and-go breakfasts.
