Brown Sugar Icing
Here is a really good brown sugar icing recipe. It is very sweet and delicious spread on spice cakes, banana cakes, and chocolate cakes. Yum!
This icing takes a bit more work than the average icing recipe and you may need to use some muscle mixing it but it is worth it 🙂
How to Make Brown Sugar Icing from Scratch
Start with a small saucepan and add 1/2 cup margarine or butter, 2 tablespoons milk, 1 teaspoon vanilla extract, and of course 1 cup of packed light brown sugar.
Whisk all of these together and let it come to a boil for 2 minutes. If you have nice pots I recommend using plastic over metal whisks to prevent scratching. Here is a good plastic whisk for a decent price.
Remove from heat and add about 1 and 1/2 cups icing sugar to thicken. This is where your muscles come in because you want to stir this vigorously to eliminate lumps. Once smooth you can pour this over your warm cake. This icing hardens quickly so you want to spread it on a warm cake to make for easier spreading.

Ingredients
- ½ cup butter or margarine
- 1 cup brown sugar packed
- 2 tbsp milk
- 1 tsp vanilla extract
- 1 ½ cup icing sugar
