Brownie Baked Oatmeal Recipe (with cocoa powder)

You will love this Brownie Baked Oatmeal recipe because it is made with cocoa powder and chocolate chips for a dessert like breakfast! This recipe truly resembles brownies but is much healthier.

This has quickly become my favourite baked oatmeal recipe! I adapted this recipe from my already delicious Peanut Butter Baked Oatmeal. I just reduced the peanut butter and added cocoa powder and chocolate chips for a super chocolatey flavour.

Who says you can’t have chocolate for breakfast? I love a good brownie, and if I can incorporate it into breakfast, you bet I will. If you have a sweet tooth this will definitely satisfy that craving. And, you don’t have to just eat it for breakfast either, I love eating it for a midday snack as well!

Ingredients You’ll Need

  • Ripe Bananas: A healthy carb which adds flavour, sweetness and moisture. Applesauce may be. used as a substitute.
  • Peanut butter or cashew butter: adds additional protein, fat and flavour to the recipe. Just be sure to use natural, the only ingredient should be nuts!
  • Almond milk: a healthy fat, may be substituted with milk of choice. Adds moisture to the recipe.
  • Maple syrup: a natural sweetener. May substitute with honey.
  • Vanilla: adds flavour
  • Rolled oats: another healthy carb which is the base for this recipe.
  • Cocoa powder: gives it an all-around chocolatey flavour
  • Baking powder: gives it some lift.
  • Salt: flavour enhancer
  • Chocolate Chips: You can use any chocolate chips but I prefer to use dark chocolate to be healthier and gain a strong chocolate flavour.

Instructions for Brownie Baked Oatmeal Recipe (no cocoa)

Preheat oven to 350°F. Grease an 8×8-inch baking dish and set aside.

In a large bowl mix 2 cups of rolled oats, 1/3 cup cocoa powder, 1 teaspoon baking powder and 1/4 tsp salt.

In a medium bowl, mix 2 ripe mashed bananas, 1 cup milk, 1/4 cup maple syrup, 1/4 cup nut butter, and 1 and 1/2 teaspoon vanilla extract.

Pour the liquid ingredients into the dry ingredients and stir until combined.

Stir in 1/2 cup of chocolate chips and pour into your prepared baking dish. Sprinkle extra chocolate chips on top if desired.

Bake for 45-50 minutes or until set. Cool for about 10 minutes before serving. Top with optional toppings and enjoy!

What to serve with Brownie Baked Oatmeal

Topping ideas:

  • a dollop of Greek yogurt
  • splash of milk
  • fresh or frozen berries
  • drizzle of nut butter
  • sliced bananas
  • whipped cream

Serve alone or alongside:

  • Eggs- boiled, fried, scrambled, egg muffins
  • Sausage
  • Bacon

Recipe Substitutions

  • Use milk of your choice whether that’s dairy milk, or coconut, soy or nut milk to keep it dairy-free. My milk of choice is almond but any would be acceptable.
  • I always use rolled oats in baked oatmeal not quick, but be sure to use certified gluten-free if you are avoiding gluten.
  • You may use cashew or almond butter in place of peanut butter
  • I’ve only used maple syrup in this recipe, but I’m sure honey would be an acceptable replacement
  • I recommend using semi-sweet or dark chocolate chips, but milk chocolate would be fine too. If you want to keep the recipe dairy-free be sure to use dairy-free chocolate chips.

Storage Tips

Store covered in the fridge for up to 1 week, or in the refrigerator in freezer safe bag or container for up to 3 months. I like to freeze in individual portions to take out only what I need. Just let thaw in the fridge overnight.

To reheat simply microwave for about 30-40 seconds per serving.

What’s the difference between baked oats and oatmeal?

Baked oats are baked in the oven with milk and other mix-ins for a longer period of time. The liquid is baked into the oats so they come out more solid. Regular oatmeal is cooked in milk or water on the stovetop for a shorter period of time and comes out more liquidy than baked oats.

And then of course there are Overnight Oats which are mixed the night before in a container or jar and left to sit in the fridge overnight. The oats soak up the liquid, soften and expand so they are ready to be eaten right out of the fridge in the morning.
