Brownie Baked Oatmeal

This Brownie Baked Oatmeal recipe is made with cocoa powder and chocolate chips for a dessert like breakfast! This recipe truly resembles brownies but is much healthier.

Ingredients

  • 2 cups oats rolled
  • cup cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 ripe bananas mashed
  • 1 cup milk of choice
  • ¼ cup maple syrup pure
  • ¼ cup peanut butter or cashew butter
  • 1 ½ tsp vanilla extract
  • ½ cup chocolate chips

Optional Toppings

  • Milk
  • Greek Yogurt
  • Fresh Fruit

Instructions

  1. Preheat oven to 350°F. Grease an 8x8-inch baking dish and set aside.

  2. In a large bowl mix 2 cups of rolled oats, 1/3 cup cocoa powder, 1 teaspoon baking powder and 1/4 tsp salt.

  3. In a medium bowl, mix 2 ripe mashed bananas, 1 cup milk, 1/4 cup maple syrup, 1/4 cup nut butter, and 1 and 1/2 teaspoon vanilla extract.

  4. Pour the liquid ingredients into the dry ingredients and stir until combined.

  5. Stir in 1/2 cup of chocolate chips and pour into your prepared baking dish. Sprinkle extra chocolate chips on top if desired.

  6. Bake for 45-50 minutes or until set. Cool for about 10 minutes before serving. Top with optional toppings and enjoy!
