This Brownie Baked Oatmeal recipe is made with cocoa powder and chocolate chips for a dessert like breakfast! This recipe truly resembles brownies but is much healthier.
Preheat oven to 350°F. Grease an 8x8-inch baking dish and set aside.
In a large bowl mix 2 cups of rolled oats, 1/3 cup cocoa powder, 1 teaspoon baking powder and 1/4 tsp salt.
In a medium bowl, mix 2 ripe mashed bananas, 1 cup milk, 1/4 cup maple syrup, 1/4 cup nut butter, and 1 and 1/2 teaspoon vanilla extract.
Pour the liquid ingredients into the dry ingredients and stir until combined.
Stir in 1/2 cup of chocolate chips and pour into your prepared baking dish. Sprinkle extra chocolate chips on top if desired.
Bake for 45-50 minutes or until set. Cool for about 10 minutes before serving. Top with optional toppings and enjoy!
Store in fridge up to 1 week, or in the freezer up to 3 months.
