Another healthy muffin recipe- this time with protein! These muffins are a great way to add more protein to your diet. And, yes, you can add protein powder to your muffins for a high-protein snack. You will love these Chocolate Chip Protein Muffins because they are quick and easy to make, dense, and moist.

I have to admit they are not as tasty as some of my other muffin recipes like these white muffins or banana chocolate chip muffins but if you’re looking for a healthier high-protein snack these muffins are it!

Ingredients You’ll Need

  • Almond Flour: use almond flour for a gluten-free snack.
  • Vanilla Protein Powder: use any vanilla protein you like, I use Truvani, but I’ve also used Vega Protein & Greens (just be mindful Vega makes the muffins turn green).
  • Baking Powder: leavening agent.
  • Egg: brings everything together.
  • Applesauce: a refined sugar sweetener that also adds moisture.
  • Water: added moisture for the proper texture.
  • Dark Chocolate Chips: adds chocolatey flavour and added sweetness. Use dark for a healthier option but semi-sweet works as well. Use sugar-free to keep these muffins refined-sugar-free.

Chocolate Chip Protein Muffins Instructions

Preheat your oven to 350° F and grease or line a muffin pan. This recipe only makes 7 muffins, therefore, you only need to grease 7 tins.

Mix in a large bowl 1/2 cup of almond flour, 2 scoops of vanilla protein powder (about 60 grams), and 1 and 1/4 teaspoons of baking powder. Add 1 egg, 1/2 cup of applesauce, and 1/4 cup of water and mix until fully incorporated. Stir in 1/3 cup of dark chocolate chips.

Pour into your prepared muffin tins about 2/3 full. Bake in the oven for about 15 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Cool for 10 minutes before transferring to a wire rack to cool completely.

Tips for the Best Muffins

  • Choose the right protein powder- A high-quality powder enhances flavour and texture. My favourite protein powder I’ve tried is Truvani. I love this brand because it uses organic ingredients and is a clean formula, free of additives and fillers. This protein powder excludes soy, wheat, dairy, gluten, and stevia, ensuring a clean and wholesome blend. It’s both tasty and nutritious. I’ve also heard good things about FlavCity but have not tried it myself.
  • Don’t overmix– Mix until just combined to keep muffins soft and fluffy.
  • Keep refrigerated- these muffins last longer in the fridge or can be frozen for up to 3 months. Tip: warm thawed muffins in the microwave for a few seconds before eating for the best taste.

How long do protein muffins last?

These Chocolate Chip Protein muffins will last about 7 days in the fridge. I recommend storing them in the fridge as they are incredibly moist and will keep best if refrigerated. Can store in the freezer for up to 3 months as well.

Nutrition

According to MyFitnesspal, each muffin contains 114 calories, 10g of carbs, 6g of fat and 8g of protein. I used Vega Protein & Greens Vanilla in this recipe. Nutrition will be slightly different depending on the protein powder you use.
