Healthy high-protein muffins.
Preheat your oven to 350° F and grease or line a muffin pan. This recipe only makes 7 muffins, therefore, you only need to grease 7 tins.
Mix together in a large bowl 1/2 cup of almond flour, 2 scoops of vanilla protein (I use Truvani), and 1 and 1/4 teaspoons of baking powder. Add 1 egg, 1/2 cup of applesauce, and 1/4 cup of water and mix until fully incorporated. Stir in 1/3 cup of dark chocolate chips.
Pour into your prepared muffin tins about 2/3 full. Bake in the oven for about 15 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Cool for 10 minutes before transferring to a wire rack to cool completely.
Keeps well in the fridge for up to 7 days.
