Chocolate Chip Protein Muffins

Ingredients

  • ½ cup almond flour
  • 2 scoops vanilla protein powder 60 grams
  • tsp baking powder
  • 1 egg large
  • ½ cup applesauce unsweetened
  • ¼ cup water
  • cup chocolate chips dark

Instructions

  1. Preheat your oven to 350° F and grease or line a muffin pan. This recipe only makes 7 muffins, therefore, you only need to grease 7 tins.

  2. Mix together in a large bowl 1/2 cup of almond flour, 2 scoops of vanilla protein (I use Truvani), and 1 and 1/4 teaspoons of baking powder. Add 1 egg, 1/2 cup of applesauce, and 1/4 cup of water and mix until fully incorporated. Stir in 1/3 cup of dark chocolate chips.

  3. Pour into your prepared muffin tins about 2/3 full. Bake in the oven for about 15 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Cool for 10 minutes before transferring to a wire rack to cool completely.
