Moist Coffee Cake

This moist coffee cake recipe is simple to make and quite scrumptious. It will be your cake of choice while sipping on a nice hot cup of coffee, hence its name. It is an easy to make basic white cake with layers of cinnamon and brown sugar.

Although this is a simple cake, it would be a delicious cake to make for a birthday tea party. A simple yet elegant choice.

What Makes a Coffee Cake a Coffee cake?

Coffee Cake can be a bit confusing to some because there is no actual coffee in the cake.

Coffee cake is a moist, tender cake that is layered with cinnamon sugar streusel and served alongside coffee or tea. They stand apart from other cakes because of their streusel topping and because they are not frosted.

So although there is no coffee in traditional coffee cake it is intended to be served as the perfect accompaniment to your morning or afternoon coffee or tea.

Instructions

Preheat oven to 350°F. Grease a 9×13 inch cake pan. Set aside.

To make the filling just mix together 1/2 cup of packed brown sugar (you may use dark or light) and 1 tablespoon of ground cinnamon in a small bowl. Set aside.

For the cake batter start by blending together 1/2 cup margarine or butter, 2 eggs, and 1 cup of white sugar in a large bowl. Add 1 teaspoon of vanilla extract and 2 teaspoons and baking powder and mix.

Mix together 1 cup of soured milk with 1 teaspoon baking soda.  Add this alternatively with 2 cups of all-purpose flour to the cake batter until mixed well.

Pour half into your greased 9×13 inch cake pan. Sprinkle half of your filling on top. Pour the rest of the cake batter on top and remaining filling.

Bake at 350 F for 25 minutes or until a toothpick inserted into the centre comes out clean. Let cool completely on a wire rack before slicing.

As you slice into the coffee cake you’ll see that layer of cinnamon sugar in between that makes it look oh so appealing. Eat up with your fingers or make it more formal with a dessert fork…you choose 🙂

Ingredients

Filling

  • 1 tbsp cinnamon ground
  • ½ cup brown sugar packed

Cake batter

  • ½ cup margarine or butter softened
  • 1 cup white sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 cup milk soured
  • 1 tsp baking soda
  • 2 cup flour all-purpose

Instructions

  1. Preheat oven to 350°F. Grease a 9×13 inch baking pan with nonstick spray. Set aside.

Filling

  1. Combine brown sugar and cinnamon. Set aside.

Cake batter

  1. Blend together margarine or butter, eggs, and white sugar. 

  2. Add vanilla extract and baking powder. Stir. 

  3. Mix together soured milk, and baking soda. Add alternatively with flour to the cake batter until combined. 

  4. Pour some batter on bottom of cake pan, just enough to cover bottom, and sprinkle some filling on top. Pour rest of batter on top and then rest of filling.

  5. Bake at 350 F for 25 minutes or until a toothpick inserted into the centre comes out clean. Let cool completely before slicing.

Recipe Notes

Cover leftover cake and store at room temperature or in the refrigerator up to 3 days.
