Oatmeal Chocolate Chip Cookies

Today I am sharing a variation of the classic chocolate chip cookie- oatmeal chocolate chip cookies! This recipe is my moms and is her favourite cookie. These are also a soft cookie but are a little chewier with the addition of the oatmeal. Again enjoyable on their own or with a cold glass of milk.

This batch makes about 4 dozen cookies so you can share with your friends and family or freeze them for later. Put a few in the kids lunch box and they will be sure to thank you. I made a batch and sent half to my husband and his co-worker. They work so hard I think they deserve a sweet treat every now and then.

Oatmeal Chocolate Chip Cookie Instructions

Heat your oven to 350 F to start.

In a large bowl, cream together 1 cup softened margarine or butter, 3/4 cup packed brown sugar, and 1/4 cup white sugar until well combined. I prefer to always use light brown sugar when I’m baking unless a recipe specifically calls for dark, but you could use either in this recipe.

Add in 2 eggs, incorporating them into the dough one at a time. Then add in the 2 tsp of milk and 2 tsp of vanilla extract, and beat well. I love using vanilla extract in my baking as I think it really adds to the flavour.

In a separate bowl combine 1 and 3/4 cups all-purpose flour, 1 tsp baking soda,  1 tbsp corn starch, and 1/2 tsp salt. Add to your previous bowl and mix.

Time for the oats. You can use quick or rolled, just be sure to add in 2 and 1/2 cups of them. Stir in just until your dough comes together.

The final step to this delicious cookie dough is to add 1 and 1/2 cups of chocolate chips. You could also add in nuts if you wish.

Tidbit: You can chill the dough for 45 minutes and up to 4 days. You can also freeze cookie balls for up to 3 months if you are not ready to bake them yet, or do not want to bake them all at once. Increase the bake time by one minute if baking from frozen.

You do not have to chill the dough before baking but I do recommend it because it helps prevent cookies from spreading out too quickly.

Alright, now it’s time to scoop the cookie dough by small spoonfuls onto un-greased cookie sheets. I remember as a kid always wanting to eat the dough when my mom would make these. I love how food can bring people together and make such sweet memories-literally sweet in this case 🙂

Bake in the preheated oven for about 10 minutes or until the edges are golden brown. Cool on the baking sheet for 5 minutes before removing onto a wire rack to cool completely.

Chewy Oatmeal Chocolate Chip Cookies

These oatmeal chocolate chip cookies are sure to please the whole family. Soft and chewy they make for an excellent snack.

Ingredients

  • 1 cup margarine or butter softened
  • ¾ cup brown sugar packed
  • 1/4 cup white sugar
  • 2 eggs
  • 2 tsp milk
  • 2 tsp vanilla extract
  • 1 ¾ cup flour all-purpose
  • 1 tsp baking soda
  • 1 tbsp corn starch
  • ½ tsp salt
  • 2 ½ cups quick or rolled oats
  • 1 ½ cups chocolate chips

Instructions

  1. Heat oven to 350° F.

  2. Cream together margarine or butter and sugars. Beat in eggs one at a time. Add milk and vanilla and mix well. 

  3. In a separate bowl. Combine, flour baking soda, corn starch and salt. Stir  into the butter mixture until a nice dough is formed. Incorporate  the oats. And lastly add the chocolate chips and mix, but do not over mix. 

  4. Chill dough in the refrigerator for 45 minutes to 1 hour.*

  5. Drop by spoonfuls onto baking sheets. Bake in preheated oven for 10 minutes or until edges are golden brown. Let cool completely on wire racks and enjoy. 

Recipe Notes

You can chill the dough for 45 minutes and up to 4 days. You can also freeze cookie balls up to 3 months if you are not ready to bake them yet, or do not want to bake them all at once. Increase the bake time one minute if baking from frozen.

Baked cookies can also be placed in the freezer for up to 3 months in freezer safe container or bag.
