These bars are a take on the classic sandwich we all know and love. I don’t know about you but pb&J anything sounds wonderful to me. I even have a healthy smoothie that resembles the classic flavour here.

This is a fabulous recipe…everyone will be asking for the recipe and you’ll be making it on repeat after you try it!

These bars are also very versatile as you can pretty much use any jam you desire. I used my homemade Strawberry Jam and it was so good. My apple strawberry jam would be delicious too. Basically, any berry jam would taste delicious in this bar recipe.

Peanut Butter and Jelly is just such a classic flavour and brings back a feeling of nostalgia as we probably all ate it as a kid on our favourite bread. My son loves PB & J sandwiches so these bars were a big hit for him. That’s why I just had to create a peanut butter & jelly bar recipe because it is such a classic flavour combo and the bars give off a great texture too.

After making these bars you’ll find how easy they are to make, how delicious they taste and a recipe that’s definitely a keeper.

Peanut Butter & Jelly Bars

Preheat the oven to 350°F. Grease and line an 8×8-inch pan with parchment paper. Set aside.

In a large bowl with a paddle attachment cream together 1/2 cup of unsalted butter, and 3/4 cup of brown sugar for about 2-3 minutes on medium-high speed. With the mixer on low-medium speed add 1/2 cup of smooth peanut butter, 1 teaspoon vanilla extract, and 1 large egg.

In a separate smaller bowl sift together 1 and 1/4 cups of all-purpose flour, 1/2 teaspoon baking powder, and 1/2 teaspoon of salt. Add to the peanut butter mixture on low speed, and mix until fully incorporated.

Spread 2/3 of the mixture into the prepared pan. Spread 1/2 cup of strawberry jam* evenly over the dough. Drop the remaining dough in small globs evenly over the jam. Bake for 25-30 minutes or until golden brown. Cool completely on a wire rack before cutting into bars.

*you can substitute the strawberry jam for any berry jam you’d like.

Ingredients

  • ½ cup unsalted butter softened

Recipe Notes

*you can substitute the strawberry jam for any berry jam you’d like.

Bars will keep at room temperature for 3 days, in the refrigerator for up to a week, and in the freezer for up to 3 months in a freezer-safe bag or container.
