Peanut Butter & Jelly Bars

These Peanut Butter & Jelly Bars use just a few common ingredients to make a bar that is bursting with peanut butter and jelly!

Ingredients

  • ½ cup unsalted butter softened
  • ¾ cup brown sugar packed
  • ½ cup peanut butter smooth
  • 1 tsp vanilla extract
  • 1 large egg room temperature
  • 1 ¼ cups flour all-purpose
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup strawberry jam*

Instructions

  1. Preheat the oven to 350°F. Grease and line an 8x8-inch pan with parchment paper. Set aside.

  2. In a large bowl with a paddle attachment cream together 1/2 cup of unsalted butter, and 3/4 cup of brown sugar for about 2-3 minutes on medium-high speed. With the mixer on low-medium speed add 1/2 cup of smooth peanut butter, 1 teaspoon vanilla extract, and 1 large egg. 

  3. In a separate smaller bowl sift together 1 and 1/4 cups of all-purpose flour, 1/2 teaspoon baking powder, and 1/2 teaspoon of salt. Add to the peanut butter mixture on low speed, and mix until fully incorporated.

  4. Spread 2/3 of the mixture into the prepared pan. Spread 1/2 cup of strawberry jam evenly over the dough. Drop the remaining dough in small globs evenly over the jam. Bake for 25-30 minutes or until golden brown. Cool completely on a wire rack before cutting into bars.

Recipe Notes

*you can substitute the strawberry jam for any berry jam you'd like.

Bars will keep at room temperature for 3 days, in the refrigerator for up to a week, and in the freezer for up to 3 months in a freezer-safe bag or container.
