Whipped Shortbread

I am sharing a melt-in-your-mouth cookie recipe this week- whipped shortbread cookies! This is an easy recipe that uses just a few ingredients, but they taste absolutely blissful.

Shortbread cookies are special because they have no egg or leavening agents in them. Butter, sugar, and flour are what make these cookies come together.

Whipped Shortbread

Preheat oven to 350° F.

Use a mixer for better results and start by beating 1 cup of softened unsalted butter on high speed until fluffy. Lightly beat in 1/2 cup of sifted icing sugar, this lends to the fine texture of the cookies. Then beat in 1 teaspoon of vanilla.

Add 1 and 3/4 cups of all-purpose flour a little at a time along with 1 tablespoon of cornstarch and 1/4 teaspoon of salt to the butter mixture. Mix until blended well and the dough should still be very soft, yet pliable. Do not overmix as this can lead to a tough shortbread cookie.

Roll into balls and bake on parchment-lined baking sheets for 15 minutes or until slightly brown. You can press down with a fork before baking or just leave round. Or as you can see pictured you can add sprinkles or add halved glace cherries to the tops before baking. You should smell that vanilla flavour coming through as they bake.  Let cool completely on the baking sheets before removing. Makes about 2 dozen cookies.

What Does Adding Cornstarch to Whipped Shortbread do?

Cornstarch helps create a crumbly and tender dessert-like texture. The cookies should have a tender, melting texture, but still, be slightly crisp when you bite into them.

More Decorating Ideas

Enjoy these classic shortbread cookies as is or you can decorate them before you put them in the oven. Place candied cherries in the middle of each(would be great for Christmas), or a few sprinkles on top for some extra pizzazz. You could also make a thumbprint in the centre and spread your favourite fruit jam in the centre, which would be totally delicious.

Ingredients

  • 1 cup unsalted butter softened

Instructions

  2. Add flour a little at a time along with the cornstarch and salt. Mix until blended well and the dough is soft, yet pliable. 

  3. Roll into balls onto parchment-lined baking sheets about 2 inches apart. Add halved glace cherries or sprinkles if desired. Bake in 350° F oven for 15 minutes or until slightly brown. Let stand on cookie sheets for about 5 minutes before removing to wire racks to cool.
