Whipped Shortbread

A melt-in-your-mouth cookie. Tastes blissfully as is or add some pizzazz by placing candied cherries, or sprinkles on top. Also, try making a thumbprint in each and placing jam in the centre.

Ingredients

  • 1 cup unsalted butter softened
  • ½ cup icing sugar sifted
  • 1 tsp vanilla extract
  • 1 ¾ cups flour all-purpose
  • 1 tbsp cornstarch
  • ¼ tsp salt
  • glace cherries halved optional
  • sprinkles optional

Instructions

  1. Beat butter on high until fluffy. Add sugar and vanilla and beat lightly.

  2. Add flour a little at a time along with the cornstarch and salt. Mix until blended well and the dough is soft, yet pliable. 

  3. Roll into balls onto parchment-lined baking sheets about 2 inches apart. Add halved glace cherries or sprinkles if desired. Bake in 350° F oven for 15 minutes or until slightly brown. Let stand on cookie sheets for about 5 minutes before removing to wire racks to cool.
