Apple Cinnamon French Toast Casserole

A deliciously sweet breakfast or brunch! The flavours of the apple and cinnamon in this casserole are out of this world. Prep the day before and pop in the oven in the morning.

Ingredients

  • 3 ½ cups bread cubed
  • 3 apples peeled and chopped
  • 4 eggs large
  • 1 ¼ cups milk
  • 1 ½ tsp cinnamon ground
  • 3 tbsp brown sugar packed
  • 2 tsp vanilla extract

Instructions

  1. Grease an 8x8 inch dish with butter or non-stick spray.

  2. Place 3 and 1/2 cups of cubed bread and 3 peeled and chopped apples into your prepared dish.

  3. Whisk together 4 large eggs, 1 and 1/4 cup of milk, 1 and 1/2 teaspoons of cinnamon, 3 tablespoons of brown sugar, and 2 teaspoons of vanilla. Pour evenly over the bread mixture. Cover the pan with plastic wrap and place in fridge anywhere from 3hours- to overnight.

  4. When ready to bake, preheat oven to 350 F. Bake uncovered for 45-55 minutes or until golden brown. If browning too quickly, loosely cover with foil. Serve warm.

Recipe Notes

Can be stored in the refrigerator for up to 3 days.

Can be frozen baked or unbaked up to 3 months. If baking from frozen let thaw overnght in the refrigerator and bake as directed. 

To reheat baked casserole, place in a 350 F oven for about 35 minutes or until warmed through.
