Cheesy, savoury, and delicious! These Cheeseburger Cupcakes taste like cheesy mini meatloaves baked in a muffin tin and are baked surrounded by a layer of bread.
Preheat oven to 350 F.
In a large bowl combine ground beef, chopped onion, salt, pepper, garlic powder, grated cheddar cheese, can of cheddar soup, egg, and breadcrumbs. Set aside.
Trim crusts off of 12 slices of bread. Butter one side of each bread. Place buttered side down in muffin cups and shape to fit.
Fill each muffin cup with the meat mixture filling to the top. Bake in preheated oven for 30-40 minutes or until meat is completely cooked through, internal temperature should be at least 170°F/77°C.
Will stay in refrigerator up to 3 days, and in the freezer up to 3 months.
