Sweet, fudgy, and chewy brownies.
In a medium saucepan melt 1/2 cup margarine over medium heat. Then add 1/4 cup sifted cocoa, and 1 cup of granulated sugar and mix well.
Add in eggs one at a time, working quickly so the eggs don't start to cook. You may want to let the batter cool for 5-10 minutes before adding the eggs. Add the vanilla extract and stir.
Stir in the flour and salt until fully incorporated.
Prepare an 8x8 inch baking pan with non-stick spray and/or place a piece of parchment paper in the bottom of the pan.
Pour into prepared pan and sprinkle with chocolate chips and nuts if desired.
Bake in preheated 425° F oven for 15-20 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs.
Store at room temperature for up to 3-5 days, in the fridge for up to a week, and in the freezer for up to 3 months in a freezer-safe bag or container.
