Easy Carrot Sheet Cake

A simple yet decadent recipe. A moist cake filled with carrots and cinnamon spice. Enjoy frosted with cream cheese frosting.

Ingredients

  • 1 cup sugar granulated
  • 1 cup cooking oil
  • 3 eggs
  • ½ tsp vanilla extract
  • 1 ⅓ cup flour all-purpose
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ tsp cinnamon ground
  • 2 cup carrots freshly grated

Instructions

  1. Preheat oven to 350 F.

  2. Beat sugar and oil; add eggs one at a time along with vanilla; add remaining dry ingredients, stir in carrots. 

  3. Pour into an 8x8 inch greased baking pan. Bake in preheated oven for 40-50 mins, until a toothpick inserted in the centre comes out clean. Cool completely before frosting with cream cheese frosting.

Recipe Notes

Double the recipe to make a 9x13 inch sheet cake.

To take the cake out of the pan, place a piece of parchment paper on the bottom of the greased pan. Let cool in the pan for about 20 minutes before removing to a wire rack to cool completely.
