Ingredients

  • 5 slices bacon
  • 2 cups water
  • 1 cup jasmine rice uncooked
  • ¾ cup peas frozen
  • 3 eggs
  • 2 green onions sliced
  • 3 tbsp soy sauce

Instructions

  1. Start by frying up the bacon in a large skillet. Once cooked and crispy, remove bacon to paper towels to drain. Do not rinse or wipe out the pan! There should be at least 2 tablespoons of bacon grease left, if not add some vegetable oil.

  2. Then add jasmine rice to the pan and fry for 5 minutes stirring occasionally. When rice is golden brown add water, and peas, and stir. Cover, reduce heat to low, and allow to cook for approximately 12-15 minutes.

  3. Meanwhile, scramble eggs in a separate skillet. Then dice up cooled bacon.

  4. When rice is done add scrambled eggs, diced bacon, and sliced green onions. Add soy sauce, stir and serve.

Recipe Notes

You can add in extra veggies or add frozen mixed veggies for added variety and nutrition if desired.

You can also add cooked chicken pieces for extra protein or substitute it for the bacon. However, the bacon adds great flavour to the recipe.
