Add all ingredients to a food processor and blend until well incorporated.
Grap spoonfuls and roll into 1-inch balls. Place onto a parchment-lined baking sheet and let set in the refrigerator for about an hour.
Store in a plastic bag or container.
*you can substitute the chopped dark chocolate for mini chocolate chips, just fold them in after you mix everything together.
These will keep well in the fridge for up to a week. Are stable at room temperature but are kept best in the fridge.
