Ingredients

  • 2 ½ cups rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon ground
  • ½ tsp salt
  • 2 bananas ripe
  • 2 large eggs room temperature
  • 1 ½ cups milk dairy or non-dairy
  • ⅓ cup maple syrup
  • 3 tbsp butter melted
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts optional

Instructions

  1. Preheat your oven to 375°F. Lightly grease an 8 or 9-inch square baking dish.

  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth.

  3. Whisk in the milk, eggs, maple syrup, melted butter, and vanilla extract until well combined.

  4. Stir in the rolled oats, baking powder, cinnamon, and salt. If desired, fold in chopped walnuts or chocolate chips.

  5. Pour the mixture into the prepared baking dish and spread it evenly. Bake for 30–45 minutes, or until the centre is set and the top is lightly golden.

  6. Let the baked oatmeal cool for 5–10 minutes before slicing. Serve warm with a drizzle of maple syrup, a spoonful of yogurt, or a splash of milk.
